Cucunci, typical fruits of the caper plant, are characterized by a fleshy pulp and a pleasant crunchiness given by the small seeds that develop during the flowering and ripening of the plant. Those from the island of Salina are native cucunci, unique and different in consistency, fragrance, taste, size and pulp, with a tapered shape and an intense green color. They have a particularly pungent flavor and aroma and are suitable as a snack or to enrich dishes such as salads, eggs, meat and fish, as well as being used in the preparation of sauces and in frying. Before using, it is advisable to rinse them under fresh water to eliminate the preservation salt.
